Sweet potato black bean enchiladas with grilled chicky instructions

  1. Combine all marinade ingredients into a gallon size zip lock and marinate for at least 4 hours.
  2. Preheat oven to 375 degrees. Chop sweet potatoes into 1/2in cubes. Toss with olive oil and spices. Bake 25-30 mins.
  3. Make enchilada sauce. Medium heat add garlic and onions. Add spices and stir for a minute. Add remaining sauce ingredients. Boil for 5 mins then simmer for 5 and remove from heat.
  4. Mix black beans with chopped bell pepper and jalapeño.
  5. Take out the sweet potatoes, toss with black bean mixture.
  6. Put 1/2 cup enchilada mix in piled 9×12 pan.
  7. Roll up enchiladas with cheese, insides, 1 tbsp enchilada sauce, more cheese. Put in 9×12 pan. Top with cheese and remaining enchilada sauce. Bake for 30 min.
  8. Meanwhile heat the grill and grill chicken 6-10 min per side.
  9. Put all crema ingredients into blender and blend until smooth.
