Black Bean Burritos w/ Red Sauce step by step

  1. Cook rice in cooker (1 cup rice, 2 cups vegetable broth).
  2. In saucepan sauté onion with 1 tbs vegetable broth. Add garlic, cook. Add spinach, cook. Add red peppers cook all for two mins. Add salt and pepper to taste.
  3. Once rice is cooked, add black beans.
  4. Add rice/beans with vegetables evenly between 6 tortillas, place in glass baking pan..
  5. Pre-heat oven to 350.
  6. To make sauce: Heat 1 tbs vegetable broth and sauté onion and garlic. Add 1 cup vegetable broth, tomato paste, chili powder, cumin, coriander, and cayenne pepper. Bring to boil then reduce heat immediately. Pour sauce over all burritos.
  7. Cover pan with foil and bake at 350 for 30 mins.
